Wok pan with rapeseed lecithin

What function does lecithin have in the wok pan?

Ingredients for 5 people:
3 onions
1 garlic clove
10gr olive oil
250gr Zuckerschoten
250gr Champignons
2 rote Paprika
1 yellow zucchini
1 courgette wheel
250gr Scampi
300g salmon
200ml coconut milk
5TL Rapslecithin

Spices:
Salt
Pfeffer
Curry

Preparation:
Chop the vegetables, mix with the salmon, scampi, rapeseed lecithin and coconut milk in a cast iron wok pan and cook at 200g for 25min.
