What does lecithin do to the herb butter?
Due to its emulsifying function, lecithin binds all ingredients together better and thus ensures optimal fat distribution.
Ingredients for 30 pieces of herb butter:
6 stalks parsley, picked
4 stalks dill, picked
20 stalks chives, chopped
2 Show rosemary, picked
1 red onion
1 yellow onion
2 cloves garlic
2 tsp salt
1 TL Pfeffer
750gr butter, softened in pieces
30gr sunflower lecithin
Preparation:
Take the butter out of the fridge, cut it into pieces and leave it uncovered at room temperature. The herbs are then washed and chopped into small pieces together with the onions and garlic. Now all ingredients are mixed in a food processor or blender until you get a nice, even mixture. The finished herb butter can be eaten directly. The herb butter is also perfect for freezing.
