High protein pizza dough with rapeseed lecithin
What does lecithin do to pizza dough?
- supports the fermentation function
- combines all ingredients better due to the emulsifier function
a pizza dough without toppings has 438 calories and 42.5g protein
Ingredients for 1 pizza:
160gr Dinkelmehl
40g neutral protein powder
1 teaspoon dry yeast or 1/2 yeast cube
1/2 tsp salt
80ml water
1TL Rapslecithin
Preparation:
Put all ingredients in a bowl and knead with a hand mixer or food processor for 3 minutes. Then cover the dough and let it rise at room temperature (in a warm place) for 1 hour. After 1 hour, remove the dough from the bowl, roll it out on a floured surface or press/pull it with your hands until the desired shape is achieved and top it as desired.
Finally, bake at 220 degrees in the oven or with a pizza stone (on the grill) until the desired browning is achieved. For me it took 15 minutes.
