What does phosphatidylcholine do to the bread?
The bread can be cut very thinly and still be topped with thick toppings, while remaining nice and crispy.

50g neutral protein powder
100g spelt flour
100gr fine oat flakes
15gr linseed
1 teaspoon salt
1 packet of baking powder
1 level teaspoon phosphatidylcholine
